Prepare the Brine

In a large bowl, combine kosher salt, black pepper, paprika, cayenne pepper, garlic powder, onion powder, dried thyme, liquid smoke, and cold water. Stir until the salt is dissolved.

Brining the Pork

Place the pork shoulder into the brine, making sure it is fully submerged. Cover and refrigerate for 24-48 hours.

Rinse and Dry

After brining, remove the pork from the brine, rinse it under cold water, and pat it dry with paper towels.

Smoking the Pork

Preheat your smoker to 225°F (107°C). Place the pork in the smoker and smoke for about 4-6 hours or until the internal temperature reaches 150°F (65°C).

Rest and Slice

Once done, remove the tasso ham from the smoker and let it rest for at least 30 minutes before slicing. Enjoy in your favorite dishes!
