Prepare the Ingredients

In a large bowl, mix the shredded chicken with 1 cup of shredded cheese and 1 cup of enchilada sauce. Set aside.

Assemble the Enchiladas

Preheat the oven to 350°F (175°C). Take a corn tortilla, add a couple of tablespoons of the chicken mixture, roll it up tightly, and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.

Top with Sauce and Cheese

Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle the remaining shredded cheese evenly over the sauce.

Bake

Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Serve

Serve the enchiladas hot with Spanish rice, whole beans, a dollop of sour cream, and sopapillas on the side.
