Finely chop the bell pepper and onion.

In a medium bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

Cook the Vegetables

In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the chopped bell pepper and onion. Sauté for about 3-4 minutes, or until the vegetables are tender and slightly caramelized.

Combine Ingredients

Pour the beaten eggs over the sautéed vegetables in the skillet. Allow the eggs to cook for about 1-2 minutes without stirring, until the edges start to set.

Sprinkle the cheddar cheese evenly over the top of the omelet. Let it cook for an additional 1-2 minutes until the cheese melts.
