Prepare the Apples
Wash the California apples thoroughly under cold running water. Remove the stems and cut them into quarters, leaving the skins on.
Combine Ingredients
In a large pot, combine the quartered apples and water. Bring to a boil over medium-high heat.
Cook the Mixture
Once boiling, reduce the heat to low and let the mixture simmer for about 30 minutes, stirring occasionally to help break down the apples.
Strain the Mixture
After 30 minutes, remove from heat. Using a fine mesh strainer or cheesecloth, strain the apple mixture into a large bowl, discarding the solids. You should have a good amount of apple juice.
Add Sweeteners and Spices
Return the strained apple juice to the pot. Stir in the granulated sugar, cinnamon sticks, whole cloves, grated nutmeg, lemon juice, and vanilla extract.
Simmer Again
Bring the mixture back to a simmer over medium heat. Allow it to simmer for another 15-20 minutes, stirring occasionally, until the sugar is completely dissolved and the spices have infused the cider.
