Chill glass

Place a Collins or highball glass in the freezer for a few minutes or fill it with ice and water to chill while you prepare ingredients.

Combine base

In a cocktail shaker or mixing glass, add 2 oz Hawaiian rum blend and 0.75 oz freshly squeezed lime juice. If you prefer a slightly sweeter cocktail, add 0.25 oz demerara or rich simple syrup. Add 2 dashes Angostura bitters if using.

Shake

Add a small handful of ice to the shaker and shake vigorously for 8–10 seconds to chill and slightly dilute the mix.

Prepare glass

Discard the chilling ice/water from the glass if used. Fill the chilled Collins/highball glass about three-quarters full with crushed ice (approximately 1 cup).

Strain & top

Strain the shaken rum–lime mixture over the crushed ice. Top gently with 4 oz ginger beer, pouring slowly to preserve carbonation and create a layered appearance. Give a very gentle stir (1–2 turns) to integrate flavors without flattening the ginger beer.

Garnish & Finish

Garnish

Float a lime wheel on top, garnish with a sprig of fresh mint and a piece of candied ginger on the rim or skewered on a pick. If you used bitters, flare one additional dash over the top for aroma.

Serve

Serve immediately with a straw. Encourage the drinker to sip to appreciate the interplay of dark rum richness, bright lime acidity, and spicy ginger beer heat.
