Ice Cream Base

1

Prepare the Ice Cream Base

In a medium bowl, whisk together the heavy cream, whole milk, granulated sugar, fermented honey, vanilla extract, and a pinch of salt until the sugar is fully dissolved.

2

Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it is thoroughly chilled.

3

Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

4

Freeze the Ice Cream

Transfer the churned ice cream into an airtight container and freeze for at least 4 hours or until it is firm.

In a small saucepan over low heat, melt the beeswax and butter together until fully liquefied. Remove from heat.

In a separate bowl, mix together the granulated sugar, flour, and a pinch of salt.

7

Combine Mixtures

Slowly pour the melted beeswax mixture into the dry ingredients while stirring to form a crumbly texture.

8

Bake the Crumble

Spread the crumble mixture evenly on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F (175°C) for 10-12 minutes, until golden brown. Let cool.
