Prepare Li Hing Rim & Garnish

Make rim mix

In a small shallow dish, combine li hing mui powder, granulated sugar, and optional chili-lime seasoning. Stir until even.

Moisten the rim of your serving glass with a lime wedge. Dip the glass rim into the li hing/sugar mixture, twist to coat evenly. Set glass aside to dry briefly.

Prepare garnish: thread a pineapple wedge and mint sprig (if using) on a pick or set them beside the glass. Reserve a lime wedge for finishing.

Make Dole Whip Tequila Blend

Combine base ingredients

Add frozen pineapple chunks, vanilla soft-serve mix (or softened vanilla ice cream), coconut milk, simple syrup, and fresh lime juice into a high-powered blender.

Pulse briefly to break up large chunks, then blend on high until smooth and thick, scraping down the sides as needed. Mixture should be spoonable — like a soft-serve consistency. If too thick, add up to 2 tablespoons (30 ml) more coconut milk; if too thin, add a few more frozen pineapple chunks.

Add alcohol

Pour in Kapena tequila (and optional triple sec) and pulse 3–4 times to incorporate. Be careful not to over-blend; too much blending will thin the mixture. Taste and add a touch more simple syrup or lime juice if needed to balance sweetness and acidity.

If serving on crushed ice (for a slushy-cocktail style), spoon crushed ice into the prepared glass about halfway. Otherwise, proceed to spoon the Dole Whip directly into the rimmed glass.

Spoon or pipe the tequila Dole Whip into the prepared glass, creating a soft-serve swirl if possible. For a single serving, aim for about 10–12 ounces of finished volume.

Finish & Serve

Sprinkle a light pinch (about 1/8–1/4 tsp) of li hing powder on top of the Dole Whip for extra flavor and color contrast. Avoid over-sprinkling so as not to overpower the drink.

Garnish with the pineapple wedge, a lime wedge on the rim, and optional mint sprig. Serve immediately with a spoon and/or straw.

If preparing for multiple guests, scale ingredients linearly per serving, and keep tequila added to each portion individually just before serving to retain the soft-serve texture.
