Prepare beets

Place the peeled, cubed golden beets in a medium saucepan and cover with cold water by about 1/2 inch. Bring to a gentle simmer over medium heat and cook until tender when pierced with a knife, about 12–15 minutes. Drain and set aside to dry briefly.

Make caramel

In a heavy-bottomed skillet or saucepan over medium heat, add the granulated sugar and 2 tablespoons water. Swirl the pan gently (do not stir) until the sugar dissolves, then continue cooking, swirling occasionally, until the syrup turns a deep amber color, 6–8 minutes. Watch carefully to avoid burning.

Finish caramel with beets

Remove the pan from heat and immediately stir in the cold butter, then the cooked beets. The caramel will hiss and thicken—stir to coat the beet cubes evenly. Add the apple cider vinegar and 1 teaspoon sea salt, return to very low heat for 1 minute to meld flavors. Transfer to a bowl and let cool slightly; the caramel will set into a glossy glaze around the beet pieces.

Cook quinoa

In a small saucepan, combine the rinsed quinoa and 1 3/4 cups water. Bring to a boil over high heat, then reduce to low, cover, and simmer 12–15 minutes until water is absorbed. Remove from heat and let sit, covered, 5 minutes. Fluff with a fork and transfer to a large bowl to cool slightly.

Dress and combine

While the quinoa is still slightly warm, drizzle 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, and 1 teaspoon lemon zest over it. Add the chopped parsley, mint, sliced spring onions, diced cucumber, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Toss gently to combine and taste; adjust seasoning or lemon as desired. Let the tabbouleh rest 10 minutes for flavors to meld.

Yogurt & Assembly

Prepare yogurt

In a small bowl, whisk together 1 cup Greek yogurt, 2 tablespoons plain yogurt (if needed to loosen), 1/2 tablespoon lemon juice and 1/2 teaspoon minced garlic (optional) until smooth. Season with a pinch of salt and a few grinds of black pepper. Set aside chilled.

Plate

Divide the quinoa tabbouleh among 4 plates (about 1/2 cup each). Spoon a generous tablespoon or two of the lemon-garlic yogurt alongside or into the center of each portion. Arrange 6–8 pieces of the warm beet caramel on top of or next to the tabbouleh so the glaze contrasts with the herbed quinoa.

Finish and serve

Drizzle 1 tablespoon olive oil lightly over the plated beets and yogurt. Sprinkle the chopped toasted pistachios and microgreens over the dish. Finish with flaky sea salt and a crack of fresh black pepper. Serve warm or at room temperature so the beet caramel remains slightly glossy.
