Method

Soline Simple (make ahead)

Combine and heat

In a small saucepan combine 1 cup sugar and 1 cup water. Add 1/4 tsp kosher salt, the lemon zest, and 2 sprigs of fresh thyme or rosemary.

Dissolve and infuse

Heat gently over medium-low, stirring until the sugar fully dissolves. Do not boil vigorously; simmer for 3–4 minutes to allow the herb and zest to infuse.

Cool and strain

Remove from heat. Let cool to room temperature (about 20–30 minutes) to continue infusion. Strain out zest and herb, discard solids. Transfer syrup to a sealed bottle and refrigerate. Syrup will keep 2 weeks.

Chill glass

If serving in a rocks glass, place the glass in the freezer for a few minutes or fill with ice water to chill while you prepare the cocktail.

Combine ingredients

In a cocktail shaker filled halfway with ice combine 1.5 oz Brutto (bitter aperitif or amaro), 0.5 oz Campari, 0.5 oz Soline Simple syrup, 0.75 oz fresh lime juice, and 0.5 oz gin (or neutral spirit).

Shake

Shake vigorously for 12–15 seconds until the outside of the shaker is cold and well-chilled and the mixture is slightly diluted and frothy.

Strain

Discard ice or water from the chilled serving glass. Strain the cocktail into a rocks glass over one large ice cube or fresh ice.

Top (optional)

For a longer, lighter drink, top with about 1 oz soda water. Gently stir once to integrate.

Garnish & serve

Garnish with a lime wheel on the rim and a sprig of thyme or rosemary tucked into the ice. Serve immediately.
