Preparing the Fries

Cutting the Potatoes

Wash and peel the potatoes. Cut them into evenly sized strips, about 1/4 inch thick.

Soaking the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Frying the Fries

In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the fries in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Mixing Ingredients

In a bowl, combine mayonnaise, truffle oil, garlic powder, lemon juice, and salt. Mix well until smooth.

Taste and Adjust

Taste the truffle mayo and adjust the seasoning if necessary. Add more truffle oil for a stronger flavor if desired.
