Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill with ice and water to chill while you build the cocktail.

If using the optional oloroso rinse (Les Follettes touch): pour 0.25 oz oloroso into the chilled glass, swirl to coat the inside, then discard or set aside the excess. This leaves a subtle sherry aroma.

In a mixing glass filled with plenty of ice combine 1.5 oz Savigny FR oloroso (oloroso-style sherry) and 1.5 oz sweet vermouth.

Add 2 dashes aromatic bitters (and 1 dash orange bitters if using).

Stir the mixture briskly for 20–30 seconds until well chilled and properly diluted (roughly 25–30 revolutions). The drink should be cold and slightly viscous.

Discard ice/water from the chilled serving glass if you used one. Strain the cocktail through a fine strainer into the chilled coupe or Nick & Nora glass.

Express the oils from an orange twist over the drink by holding the twist skin-side down above the surface and giving it a firm snap, then rub the rim of the glass with the twist and drop it into the cocktail as garnish.
