Prepare glass

Chill a coupe or Nick & Nora glass by placing it in the freezer for a few minutes or filling it with ice water while you make the cocktail. If using an absinthe rinse instead of measured absinthe, proceed to rinse step below.

Absinthe rinse (optional)

If you prefer a pronounced absinthe aroma, pour about 1/4 tsp (or a small splash) of absinthe into the chilled glass, swirl to coat the interior, then discard the excess. If you choose not to rinse, measure 1/4 tsp absinthe into the shaker with the other ingredients.

Combine ingredients

In a mixing glass or cocktail shaker, add 2 oz Gran Paradiso pisco, 1/2 oz genepy, 3/4 oz blanco (white) vermouth, 1/4 oz simple syrup, 1/4 oz fresh lemon juice, and 1/4 tsp absinthe if not rinsing. Add plenty of ice to the shaker or mixing glass.

Stir or shake

For a silky texture: stir the mixture in a mixing glass for 20–30 seconds until well chilled and slightly diluted. For a slightly brighter, frostier drink: shake vigorously for 10–12 seconds and then double-strain into the chilled glass. Both methods work; stirring emphasizes the pisco's texture and clarity.

Strain & finish

Fine-strain the cocktail into the chilled coupe or Nick & Nora glass. If you used an absinthe rinse earlier, simply pour the stirred/shaken cocktail in; if you measured absinthe in the shaker, it will already be integrated.

Garnish

Express an orange twist over the surface to release oils, run it around the rim if desired, and drop it into the drink. Serve immediately.
