Coconut infusion

Toast and steep coconut

Lightly toast 1 tablespoon unsweetened coconut flakes in a dry skillet over medium-low heat for 1–2 minutes until fragrant and just turning golden. Remove from heat and let cool 1 minute. Place toasted coconut in a small heatproof vessel and add 1/2 teaspoon coconut syrup (or a few drops coconut water concentrate) to help extract aroma. Muddle gently to release oils and aromas. Let steep for 3–5 minutes, then strain through a fine mesh or coffee filter, reserving the coconut-infused syrup. Discard solids.

Glass prep & oloroso element

If using the oloroso rinse: pour 1/4 oz oloroso sherry into the serving glass (a stemmed beer goblet or tulip is ideal). Swirl to coat the inside, then discard excess or leave a thin film in the glass for aroma.

If you prefer stronger sherry presence, add the full 1/2 oz oloroso as an ingredient later (see assembly).

Combine spirits and infusions

In a mixing beaker, combine 1/2 oz scotch, 2 oz vermouth-barrel-aged saison, 1/2 oz oloroso sherry (unless you used the rinse-only option), and the strained coconut-infused syrup from the previous step. Stir gently to combine — aim for homogeneity without aggressive aeration.

Chill (optional): If you want a colder, more integrated drink, stir the spirit mixture with a few ice cubes in a mixing glass for 10–15 seconds, then discard the ice.

Add base beer: Pour 12 oz saison (served chilled but not overly cold, about 42–50°F / 6–10°C) into the prepared glass. Slowly pour the spirit and infusion mixture down the side of the glass so it layers and integrates without excessive head formation. If you chilled the spirit mixture with ice, strain it as you pour.

Finish and gently stir: Give the cocktail a single gentle stir with a bar spoon (3–4 rotations) to integrate the beer and spirit elements while preserving carbonation.

Garnish & serve

Rim garnish: Lightly press 1 teaspoon finely crushed plain butter cracker onto a small section of the glass rim or sprinkle a small pinch on the surface of the beer near the edge for a subtle savory note.

Express citrus: Hold the twist over the glass and express oils by pinching it skin-side down, then run it around the rim and drop it into the drink.

Optional ice: If using the large ice cube, place it into the glass before pouring the spirit mixture; try to avoid pouring beer directly over the cube to minimize head loss.

Serve immediately and advise the drinker to sip slowly to appreciate the layered aromas — coconut and vermouth-barrel saison on the nose, scotch and oloroso adding depth, and a faint cracker-salty crumb finish.
