Rockfish with Dark Rye Crust

Prepare crust and fish

Pat rockfish fillets dry and season both sides lightly with 1 tsp kosher salt and 0.5 tsp black pepper. Set up three shallow bowls: bowl 1 — all-purpose flour; bowl 2 — whisk eggs with Dijon mustard and lemon zest until smooth; bowl 3 — combine dark rye breadcrumbs, chopped parsley, remaining 1 tsp kosher salt and 0.5 tsp black pepper. Press each fillet first into flour (shake off excess), then into egg wash, then press evenly into rye breadcrumb mix to coat. Place coated fillets on a rack and rest 10 minutes to help adhesion.

Cook fillets

Heat a large skillet over medium-high heat and add 3 tbs neutral oil until shimmering. Sear fillets 3–4 minutes per side depending on thickness until crust is golden and fish flakes easily (internal temperature ~125–135°F / 52–57°C). If crust browns too quickly, reduce heat to medium and finish in a 400°F (200°C) oven for 4–6 minutes. Optional: add 2 tbs cold butter to pan at the end and spoon melted butter over fillets to finish. Transfer to a warm tray to rest.

Charred Cabbage

Preheat broiler to high or heat a grill skillet until very hot. Brush cabbage wedges with 2 tbs olive oil, sprinkle with 1 tbsp apple cider vinegar, smoked paprika, 0.75 tsp salt and 0.5 tsp pepper. Place wedges cut-side down on the hot grill pan or under broiler and char for 4–6 minutes until dark grill marks appear and the edges begin to soften. Turn and cook another 3–4 minutes so cabbage is tender-crisp. For slightly softer texture, finish in a 375°F (190°C) oven for 8–10 minutes. Keep warm.

Slow-Roasted Baby Carrots

Preheat oven to 300°F (150°C). Toss baby carrots with 2 tbs butter, 1 tbs honey, thyme sprigs, 0.75 tsp salt and 0.5 tsp pepper in a roasting pan. Add 1/4 cup water to the pan, cover tightly with foil and roast 40–55 minutes until carrots are tender and glazed. Remove foil for the last 10 minutes to concentrate glaze and encourage slight caramelization. Keep warm.

Herbed Wild Rice

Rinse wild rice briefly. In a medium saucepan over medium heat melt 1 tbs butter, add minced shallot and sauté 1–2 minutes until translucent. Add 1 cup wild rice blend and stir to coat. Pour in 2 cups stock, bring to a simmer, cover and reduce heat to low. Cook per package instructions (usually 40–50 minutes) until grains are tender and some grains have burst. If needed, drain any excess and return to pan. Stir in chopped parsley, chives, 0.75 tsp salt and 0.5 tsp pepper. Keep covered and warm; fluff before plating.

Hollandaise Espuma

For a stable hollandaise foam suited to a siphon (espuma): whisk 3 egg yolks with 1 tbsp lemon juice and 0.5 tsp salt in a heatproof bowl. Place bowl over a gentle simmer (double boiler) and whisk constantly while slowly streaming in 6 tbs warm melted butter until the mixture thickens into a hollandaise-like emulsion. Remove from heat. If using lecithin, whisk 1 tsp into the warm sauce for foam stability; if using gelatin, soften 1 gelatin sheet in cold water, melt briefly and whisk into the warm sauce. Taste and adjust seasoning with white pepper/cayenne. Cool slightly, then strain into a mixing cup and whisk in 2 tbs warm water and 1/4 cup chilled heavy cream to reach a pourable but aeration-friendly consistency. Pour through a fine sieve into a 0.5 L or 1 L cream siphon charged with one N2O cartridge (follow siphon manufacturer guidance). Chill siphon in an ice bath 10–15 minutes before use. Alternatively, for immediate service without siphon, hold warm and serve as a classic hollandaise.

Finishing & Plating

Warm plates. Spoon a bed of herbed wild rice slightly off-center. Arrange two charred cabbage wedges and a cluster of slow-roasted baby carrots beside the rice. Place a dark rye–crusted rockfish fillet on top or next to the rice. Shake the chilled hollandaise siphon and dispense a light espuma over the fish (or spoon warm hollandaise around the plate). Garnish with microgreens, extra chopped parsley and a lemon wedge. Serve immediately.
