Simple Syrup Preparation

Make the Simple Syrup

In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water. Heat over medium heat, stirring until the sugar is fully dissolved.

Infuse Chamomile

Once the sugar has dissolved, add 1 cup of dried chamomile flowers to the saucepan. Bring the mixture to a gentle simmer and allow it to steep for about 10 minutes.

Strain the Syrup

After simmering, remove the saucepan from heat and let it cool slightly. Strain the mixture through a fine mesh sieve into a clean jar to remove the chamomile flowers. Allow the syrup to cool completely.

Combine Ingredients

In a large pitcher, combine the cooled chamomile simple syrup (about 1 cup) and 1 cup of fresh lime juice. Stir well to combine.

Add Soda Water

Slowly add 4 cups of soda water to the pitcher, gently stirring to mix without losing all the carbonation.

Serve

Fill glasses with ice cubes (about 1/2 cup per glass), then pour the chamomile-lime soda mixture over the ice.

Garnish

Garnish each glass with a few fresh chamomile flowers and a lime wedge.
