Dip Preparation
Mix the Ingredients
In a mixing bowl, combine the sheep's milk ricotta, Greek yogurt, lemon juice, fine herbs, salt, and black pepper.
Whisk Together
Using a whisk or a fork, blend the ingredients until smooth and creamy. Adjust seasoning to taste.
Chill the Dip
Cover the dip with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Preheat the Oven
Preheat your oven to 375°F (190°C).
Prepare the Sunchokes
Wash and scrub the sunchokes thoroughly. Slice them thinly using a mandoline or sharp knife.
Toss with Olive Oil
In a mixing bowl, toss the sliced sunchokes with olive oil, salt, and black pepper until evenly coated.
Arrange on Baking Sheet
Spread the sunchoke slices in a single layer on a baking sheet lined with parchment paper.
Bake the Chips
Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Flip halfway through for even cooking.
Cool the Chips
