Method
Salad Preparation
Prepare the Greens
Wash and dry the romaine lettuce, arugula, and radicchio. Chop the romaine into bite-sized pieces and the radicchio into thin strips. In a large salad bowl, combine the romaine lettuce, arugula, and radicchio.
Add Cheese
Grate the Grana Padano or Parmesan cheese. Sprinkle it over the mixed greens in the salad bowl.
Crouton Preparation
Make the Croutons
Preheat the oven to 375°F (190°C). Cut the ciabatta bread into small cubes. In a mixing bowl, toss the cubed ciabatta with olive oil, garlic powder, and salt until evenly coated. Spread the croutons on a baking sheet and bake for 10-12 minutes until golden brown and crispy.
Parmesan Crisp Preparation
Prepare the Parmesan Crisp
On a parchment-lined baking sheet, place small mounds of grated Parmesan cheese, spacing them apart. Bake in the oven at 375°F (190°C) for about 5-7 minutes until melted and golden. Let them cool to form crisps.
Dressing Preparation
Make the Caesar Dressing
In a mixing bowl, whisk together the mayonnaise, lemon juice, Worcestershire sauce, minced garlic, anchovy paste, salt, and black pepper until smooth and well combined.
Assemble the Salad
Combine and Serve
Add the croutons to the salad bowl with the greens and cheese. Drizzle the Caesar dressing over the salad and toss gently to combine. Top with Parmesan crisps. If you choose to add protein, place the grilled chicken, shrimp, salmon, or steak on top before serving.
