Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into uniform sticks, approximately 1/4 inch thick.

Soak the Potatoes

Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with a clean kitchen towel to ensure they fry well.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes

Carefully add a handful of the dried potato sticks to the hot oil. Fry them in batches, ensuring not to overcrowd the pot. Cook for about 4-5 minutes or until golden and crispy.

Drain and Season

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder to taste.

Serve the fries hot with your favorite dipping sauce.
