Prepare the Onions

Peel the large onions and slice them into 1/4-inch thick rings. Separate the rings and set aside.

Make the Batter

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually add the beer, mixing until the batter is smooth and well combined.

Heat the Oil

In a deep pot or large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Onion Rings

Dip each onion ring into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

Fry the Onion Rings

Carefully place the battered onion rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Mix the Sauce

In a small bowl, combine the mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, paprika, and a pinch of salt. Stir well until the mixture is smooth and well blended.

Taste and Adjust

Taste the sauce and adjust the seasoning with additional salt if needed. Cover and refrigerate until ready to serve.
