Method

Cake Preparation

1

Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

2

Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and granulated sugar until well combined.

3

Mix Wet Ingredients

In another bowl, combine the vegetable oil, eggs, and vanilla extract. Whisk until smooth.

4

Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring gently. Fold in the grated carrots and crushed pineapple until evenly distributed.

5

Bake the Cake

Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

6

Cool the Cakes

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting Preparation

7

Prepare the Frosting

In a large bowl, beat the softened cream cheese and butter together until creamy and smooth.

8

Add Sugar and Vanilla

Gradually add the powdered sugar and vanilla extract, mixing until the frosting is light and fluffy.

9

Frost the Cake

Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer, place the other layer on top, and frost the top and sides of the cake.
