Crust Preparation

Make the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until combined and press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then let cool.

Chocolate Ganache Preparation

Prepare the Ganache

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour over the chopped chocolate in a bowl. Let it sit for 5 minutes, then stir until smooth. Pour the ganache into the cooled crust and chill in the refrigerator for about 30 minutes, or until set.

Make the Marshmallow Meringue

In a clean mixing bowl, combine egg whites and a pinch of salt. Beat with an electric mixer on medium speed until foamy. Gradually add sugar and corn syrup, then increase speed to high and beat until stiff peaks form and mixture is glossy. Add vanilla and mix until just combined.

Assembly and Final Touches

Assemble the Pie

Spread the marshmallow meringue over the set ganache layer. Using a kitchen torch, lightly toast the top of the meringue if desired. Sprinkle chocolate feuilletine on top for garnish. Chill until ready to serve.
