Prepare the Ingredients

Start by hard boiling the eggs. Place the eggs in a pot of water, bring to a boil, then cover and remove from heat. Let them sit for 10-12 minutes, then cool in ice water and peel.

Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then chop into bite-sized pieces.

In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, salt, and black pepper until well combined.

In a large bowl or platter, layer the chopped heirloom tomatoes, croutons, crumbled blue cheese, chopped bacon, and quartered hardboiled eggs.
