Brown the butter

In a small stainless steel or light-colored saucepan, melt the unsalted butter over medium heat. Swirl the pan occasionally. After a few minutes the butter will foam, then the milk solids will begin to brown and emit a nutty aroma. As soon as you see golden-brown specks and smell a toasted, nutty scent (do not let it burn), remove from heat and allow to cool for 1–2 minutes.

Combine butter and rye

Pour 2.5 oz rye whiskey into a clean glass container or jar. Add the warm (not scalding) brown butter to the rye. Seal the jar and let the mixture sit at room temperature for 1 hour to infuse. For a stronger flavor, you may refrigerate and rest for up to 4 hours.

Freeze and separate

After infusion, place the sealed jar in the freezer for at least 30–45 minutes. The butterfat will solidify on top.

Strain the washed rye

Remove the jar from the freezer. Use a spoon to remove the solidified butterfat, then strain the liquid through a coffee filter or fine cheesecloth into a clean bottle or container. This yields brown‑butter washed rye. Measure out 2 oz for the cocktail and reserve any extra in the fridge for future cocktails (keeps ~1–2 weeks refrigerated).

Brown sugar syrup

Combine 1/2 cup dark brown sugar and 1/2 cup water in a small saucepan. Heat gently over medium, stirring until sugar fully dissolves. Bring just to a simmer, then remove from heat and let cool. Transfer to a sealed container and refrigerate. Yields about 3/4 cup syrup. Use 1/4 oz (approximately 1/2 tablespoon) per cocktail. Keeps up to 2 weeks refrigerated.

Assembly & finish

Chill: If using, place your rocks glass in the freezer or fill with ice to chill while you assemble the drink.

Mix: In a mixing glass, add 2 oz brown‑butter washed rye (from above), 1/4 oz (0.25 oz) brown sugar syrup, and 2 dashes of Angostura bitters. Add large ice and stir for 20–30 seconds until properly diluted and chilled (target ~20–25% dilution by eye; aim for a satin texture and cold glass).

Prepare glass & ice: Discard chilling ice from the serving glass. Place one large cube or sphere of craft ice into the rocks glass.

Strain & garnish: Double‑strain the cocktail into the glass over the large ice. Express the orange peel over the drink by holding it peel‑side down and giving it a firm twist to release oils, then rub the peel along the glass rim and drop it in. Add 1 Luxardo cherry on a pick, or place in the glass.

Serve: Present immediately. Optionally, add one additional light dash of bitters on top of the drink or onto the cherry for aromatic accent.
