Preparing Falafel

Make the Falafel

In a food processor, combine chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, and salt. Process until a coarse mixture forms. Add flour gradually until mixture holds together. Shape into balls and refrigerate for 30 minutes.

Fry the Falafel

Heat oil in a deep pan. Fry falafel balls until golden brown and crispy. Remove and drain on paper towels.

Making Beet Hummus

Blend Ingredients

In a blender, combine roasted beets, tahini, lemon juice, garlic, olive oil, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Crispy Chickpeas

Prepare Chickpeas

Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, smoked paprika, and salt. Spread on a baking sheet and roast for 25-30 minutes until crispy.

Mint Scallion Salad

Mix Salad

In a bowl, combine diced cucumbers, halved cherry tomatoes, chopped mint, and sliced scallions. Drizzle with olive oil and season with salt. Toss to combine.

Lemon Tahini Emulsion

Prepare Emulsion

In a small bowl, whisk together tahini, lemon juice, water, garlic, and salt until smooth. Adjust consistency with additional water if needed.
