Prepare the Ingredients

Gather all ingredients. If using vegetables or meats, chop them into small pieces.

Cook the Potatoes

Preheat oven to 425°F (220°C). Cut potatoes into small cubes, toss with olive oil, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy, stirring halfway.

Whisk Eggs

In a bowl, whisk the eggs with salt and pepper until well combined.

Cook the Omelet

Heat olive oil in a non-stick skillet over medium heat. Add the whisked eggs and cook without stirring until the edges begin to set. Add your choice of ingredients on one half of the omelet.

Finish and Serve

Fold the omelet in half and let it cook for another minute. Serve with crispy potatoes or grits and top with pickled red onions.
