Preparation Instructions
Make the Simple Syrup
In a small saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and allow to cool.
Prepare the Fruit Purées
In a blender, combine the diced peaches and pineapple. Blend until smooth. You may strain the mixture if you prefer a smoother texture.
Mix the Beverage
In a large pitcher, combine the fruit purées, simple syrup, lemon juice, and mint leaves. Stir well to combine.
Add Sparkling Water
Just before serving, gently stir in the sparkling water to maintain its fizz.
Serve
Pour the Peach & Pineapple beverage over ice in glasses and garnish with additional mint leaves if desired.
