Method

Prepare the savory pastry

Make pastry dough

In a medium bowl combine 1.5 cups all-purpose flour, 0.5 tsp coarse sea salt, 0.25 tsp black pepper and 0.5 tsp smoked paprika. Cut 6 tbs cold unsalted butter into small cubes and work into the flour with a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized bits of butter remaining. Stir in 1 cup grated sharp cheddar cheese. Drizzle 3 tbs ice water over the mix, fold gently until dough just comes together (add up to 1 tbs more water if needed). Shape into a disk, wrap in plastic and chill at least 20 minutes.

Cook aromatics and greens

While dough chills heat 1 tbs olive oil in a small skillet over medium heat. Add 1 finely minced shallot and 1 minced garlic clove; sauté 1–2 minutes until translucent and fragrant. Add 1 cup chopped spinach, 1 tbs honey and a pinch of salt; cook 1–2 minutes until wilted. Remove from heat and cool slightly.

Prepare egg wash

In a small bowl whisk 1 large egg with 1 tsp cold milk; set aside.

Assemble twists

Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Lightly flour work surface and roll chilled dough into a roughly 10x12-inch rectangle about 1/8-inch thick. Spread 2 tsp dijon mustard evenly across the dough, leaving a 1/2-inch border. Lay 6 thin prosciutto slices over the mustard in an even layer. Scatter the cooled spinach mixture over the prosciutto. Gently press to distribute. Starting from a long edge, roll dough tightly into a log. Slice roll into 12 equal pieces (about 1-inch thick). Using your fingers or a small knife, press each slice flat slightly, then twist each piece 2–3 times to create a spiral shape and place on prepared sheet about 1 inch apart.

Brush and add seeds

Brush each twisted piece with the egg wash. Sprinkle toasted sesame seeds and a little grated cheddar on top if desired (reserve about 1–2 tbs extra cheese).

Bake

Bake in the preheated oven for 14–18 minutes until pastry is golden, puffed and cheese is bubbling. Rotate sheet once halfway through for even browning.

Finish

Remove from oven and immediately sprinkle with 1/4 tsp coarse finishing salt and a few fresh microgreens or chopped parsley. Let cool 3–4 minutes on the sheet before transferring to a wire rack.

Quick honey-mustard dipping sauce

In a small bowl whisk together 1 tsp honey, 1 tsp apple cider vinegar, 1 tsp dijon mustard (from the 2 tsp used above — use remaining if you prefer a stronger mustard flavor), and 1 tsp olive oil. Taste and adjust: add a pinch of salt or more honey to balance. Serve alongside warm Twisted Finds twists for dipping.
