Prepare the Crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and salt. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and let cool.

Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined. Add the sour cream, vanilla extract, and mix until smooth. Add the eggs one at a time, mixing just until combined after each addition.

Bake the Cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill the Cheesecake

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
