Prepare custard-style ice cream base (if using)

If making a custard ice cream, warm 1/2 cup of heavy cream/whole milk and temper into 1 egg yolk + 2 tablespoons sugar mixture, then cook gently to 170-175°F until slightly thickened. Cool completely before churning. For a quick assembly when you have pre-made base, skip this step and use 1/2 cup chilled base.

Prepare sorbet base (if making sorbet)

Combine 2 tablespoons sugar and 2 tablespoons water in a small saucepan and heat until sugar dissolves to make a simple syrup. Cool. Puree 1/4 cup fruit (or use 1/4 cup fruit puree) and stir in the cooled simple syrup, 1/2 tablespoon lemon juice, 1/8 teaspoon salt and 1/4 tablespoon alcohol or corn syrup if using. Chill the puree thoroughly before churning.

Add flavoring and adjust sweetness/texture

For ice cream: fold 1/4 cup of your chosen flavored mix-in (chopped cookies, fruit compote, chocolate ganache) into the chilled ice cream base. Taste and add up to 1 tablespoon more sugar if needed, and a pinch more salt to enhance flavor. For sorbet: taste the puree and adjust sugar or lemon juice to balance sweetness and brightness.

Churn or freeze

Churn the prepared base according to your ice cream maker's instructions until it reaches a soft-serve consistency (about 15-25 minutes depending on machine). If you don't have a machine, place the mixture in a shallow metal pan, freeze for 20-30 minutes, then vigorously whisk or blend to break crystals; repeat every 30 minutes until smooth and scoopable.

Finish texture

If the churned ice cream is very soft, chill it briefly (10-20 minutes) to firm slightly before packing. For sorbet, ensure it is well-chilled and smooth. If mixture seems too hard after freezing, stir in an additional 1/4 tablespoon alcohol or 1/2 tablespoon corn syrup to improve scoopability (mix thoroughly).

Packaging & Finishing

Scoop 8 ounces of finished ice cream or sorbet into a clean 8 oz to-go container. Fill to just below the rim, smoothing the top with a small spatula or the back of a spoon. Wipe the rim clean with a towel to prevent sealing issues.

Place the lid on the container firmly so it is airtight. Label the container with the flavor name, date made, and any allergen notes. If serving immediately for takeout, nestle a tasting spoon on top or tape it to the lid.

Store the container in a blast chiller or freezer set to -10 to 0°F (-23 to -18°C) for long-term holding. For best texture at pickup, retrieve container 10-15 minutes before service to allow slight tempering, or instruct the guest to let it sit at room temperature for 5-10 minutes before scooping.
