In a large brew kettle, heat 5 gallons of water to approximately 160°F (71°C). Add the Pale Malt and Crystal Malt to the water, stirring to ensure all grains are wet. Maintain the temperature around 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with additional hot water (around 170°F/77°C) to collect about 6 gallons of wort.

Sparging

Bring the wort to a boil. Once boiling, add 1 oz of Cascade hops. After 45 minutes, add 1 oz of Centennial hops. With 5 minutes left in the boil, add 1 oz of Citra hops.

Boiling

After the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter with an airlock and let it ferment for about 1 to 2 weeks at a temperature between 65°F and 72°F (18°C to 22°C).

Fermentation

Once fermentation is complete, dissolve 3 oz of priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them. Let them carbonate for another 1 to 2 weeks.

Bottling

Once carbonated, chill the bottles and enjoy your homebrew Odell Mountain Standard IPA!
