Preparation of Topping

Prepare the Tomatoes

Wash the fresh tomatoes. Remove the stems and dice them into small pieces. Place them in a mixing bowl.

Add the Basil

Wash the fresh basil leaves, pat them dry, and chop them roughly. Add the chopped basil to the bowl with the diced tomatoes.

Mix the Ingredients

Drizzle the extra virgin olive oil and balsamic vinegar over the tomato and basil mixture. Season with salt and black pepper to taste. Gently toss everything together until well combined.

Prepare the Mozzarella

Slice the fresh mozzarella cheese into thin rounds or small cubes, depending on your preference. Set aside.

Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

Slice the Bread

Slice the baguette or Italian bread into 1/2 inch thick slices.

Grill the Bread

Place the bread slices on the grill, cooking for about 2-3 minutes on each side, or until they are golden brown and have grill marks. Remove from the grill.

Assembling the Bruschetta

Top the Grilled Bread

Place a generous spoonful of the tomato and basil mixture on each slice of grilled bread. Top with a slice or cube of fresh mozzarella.

Drizzle with additional olive oil if desired, and serve the bruschetta immediately while the bread is warm.
