Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C). This will ensure that your cake bakes evenly.
Melt Butter and Chocolate
In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined and slightly frothy.
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture and gently fold together until just combined.
Add Flour and Salt
Sift the all-purpose flour and a pinch of salt into the chocolate mixture. Fold gently until no flour streaks remain.
Baking
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will be soft.
Cool Slightly
Remove the ramekins from the oven and let them cool for 1 minute. This will make it easier to unmold the cakes.
Serve
Run a knife around the edges of each ramekin to loosen the cake. Invert onto a plate and serve immediately, optionally with ice cream or whipped cream.
