Rinse the mussels under cold running water. Scrub shells to remove debris and pull off beards with a quick tug. Discard any mussels that are cracked or remain open after a firm tap.

Clean mussels

In a large wide pot with a tight-fitting lid, add 120 ml water and the halved lime. Bring to a rolling simmer over high heat. Add the cleaned mussels, cover, and steam until shells open, about 5–7 minutes. Shake the pot once or twice during steaming to redistribute heat. Remove from heat when most mussels have opened. Discard any that remain closed. Transfer mussels to a warm serving dish, leaving any cooking liquid in the pot.

Steam mussels

While the mussels steam (or immediately after), combine soy sauce, rice vinegar, brown sugar, fish sauce, minced garlic, grated ginger, sliced chili, and sesame oil in a small bowl. Stir until the sugar mostly dissolves.

Prepare glaze base

In a separate small cup, whisk the cornstarch with 1 tablespoon cold water until smooth to make a slurry. Set aside.

Thicken glaze

Heat a small saucepan over medium heat. Pour in the glaze base and bring to a gentle simmer, about 1–2 minutes, stirring. Slowly whisk in the cornstarch slurry and continue simmering for 30–60 seconds until the sauce becomes glossy and slightly thickened. Remove from heat. Taste and adjust: add a little more rice vinegar for tang, a pinch more sugar for sweetness, or a dash of fish sauce for umami.

Cook glaze

Spoon the warm glaze over the steamed mussels, tossing gently so each opened shell gets some sauce. If desired, return mussels to the pot over very low heat for 30 seconds to meld flavors—do not overcook.

Glaze the mussels

Scatter chopped cilantro, sliced green onions, and toasted sesame seeds over the glazed mussels. Serve immediately with lime wedges on the side for squeezing. Accompany with crusty bread or steamed rice to soak up extra glaze, if desired.
