Brown Sugar Cinnamon Simple Syrup
Make syrup
Combine 0.25 cup dark brown sugar and 0.25 cup water in a small saucepan over medium heat. Add 0.5 tsp ground cinnamon and the optional cinnamon stick. Stir until the sugar fully dissolves and the mixture comes to a gentle simmer, about 3–4 minutes. Remove from heat and let steep for 10 minutes to deepen cinnamon flavor. Remove cinnamon stick (if used). Let syrup cool to room temperature before using. Strain if you want a completely clear syrup. Yields about 5–6 tablespoons.
Cocktail
Prepare glass
Fill a highball or copper mule mug with 1 cup cubed ice to chill the vessel.
Build cocktail
Into the prepared glass, add 2 oz Grey Goose La Poire vodka, 0.75 oz Golden 8 liqueur, 0.5 oz fresh lemon juice, and 0.5 oz (1 tbsp + 1 tsp approx.) of the cooled brown sugar cinnamon simple syrup. Stir gently to combine and slightly chill ingredients.
Top and finish
Top the mixture with 4 oz chilled ginger beer. Stir once gently to integrate without losing too much carbonation. Taste and adjust: add up to 0.25 oz more simple syrup if you prefer sweeter, or a few drops more lemon juice if you prefer brighter acidity.
Garnish and serve
Garnish with a lemon wheel or twist on the rim and a slice of fresh or candied ginger. Optionally dust a very light pinch (about 1/8 tsp) of ground cinnamon over the lemon for aroma. Serve immediately with a straw.
