Crack and beat eggs

Crack 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk, 1 teaspoon fine sea salt, and 1 teaspoon freshly ground black pepper. Using a fork or whisk, beat vigorously until the yolks and whites are fully combined and the mixture is slightly frothy (about 30–45 seconds). This incorporates air for tender curds.

Measure butter

Measure 1 tablespoon unsalted butter and have it ready. If using cheese or chives, have those chopped/grated and ready to add at the end.

Heat the pan

Place a nonstick or well-seasoned skillet (8–10 inches) over medium-low heat. Allow the pan to warm for about 1 minute. The goal is low, even heat to produce creamy curds.

Melt butter

Add the 1 tablespoon unsalted butter to the pan. Let it melt and foam but do not let it brown—this should take about 30–45 seconds. Swirl the pan to coat the surface evenly.

Add eggs

Pour the beaten egg mixture into the skillet. Let it sit undisturbed for 10–15 seconds to begin setting at the edges.

Scramble gently

Using a heatproof silicone spatula, gently push the eggs from the edges toward the center, forming soft curds. Continue moving the eggs every 10–15 seconds, allowing small curds to form and setting liquid to run. Keep the heat low; the eggs should remain glossy and slightly underdone.

Finish off-heat

When the eggs are mostly set but still slightly moist (about 1–2 minutes total cooking time depending on heat), remove the pan from the burner. Residual heat will finish cooking them. Give one final gentle fold to combine.

If using, sprinkle 1 tablespoon grated cheese over the eggs and fold once to melt and distribute. Garnish with 1 tablespoon chopped fresh chives. Taste and adjust seasoning with a pinch more salt or pepper if needed.
