Prepare the Tofu

Drain the tofu and press it gently between paper towels to remove excess moisture. Crumble the tofu into bite-sized pieces using your hands or a fork.

Chop the Vegetables

Dice the mushrooms, tomato, onion, and red bell pepper into small pieces. Rinse the arugula and set aside.

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 3-4 minutes until they soften.

Add Mushrooms and Tofu

Add the diced mushrooms to the skillet and cook for another 3 minutes, until they start to brown. Then, add the crumbled tofu, turmeric, garlic powder, salt, and black pepper. Stir well to combine.

Cook the Scramble

Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until heated through and slightly golden. Add the diced tomatoes and arugula in the last 2 minutes of cooking, stirring until the arugula wilts.

Serving

Toast and Serve

While the tofu scramble is cooking, toast the slices of bread until golden brown. Serve the tofu scramble warm on the toast, garnished with additional black pepper if desired. Add skillet crisps on the side if using.
