Honey Dijon Spread
Make the spread
In a small bowl, whisk together 3 tbs mayonnaise, 1.5 tbs Dijon mustard, 1 tbs honey and 0.5 tsp apple cider vinegar until smooth. Season with 0.25 tsp salt and 0.25 tsp black pepper. Taste and adjust sweetness or tang (add more honey or mustard) as desired. Set aside.
Sandwich assembly and prep
Prepare bread and cheese
Heat a skillet or griddle over medium. Lightly butter one side of each bread slice (about 0.5 tbs per slice) if using. Place bread butter-side-down on the skillet and toast until golden, about 1–2 minutes. Flip briefly to warm the other side if you prefer both sides toasted. Remove and set toasted side up.
Warm chicken and ham (optional)
If your chicken is cold and you prefer warm filling, warm the shredded or sliced chicken in the skillet for 1–2 minutes just until heated through. Warm the ham slices for 20–30 seconds per side to render some edges if desired. Transfer to a plate.
Prep avocado
Halve and pit the avocado. Slice or thinly mash the flesh. Toss the slices or mash with 0.5 tsp lemon juice (optional) and season lightly with 0.125 tsp salt and 0.125 tsp pepper to prevent browning and add flavor.
Assemble layers
Spread about half of the honey Dijon spread evenly over the bottom slice of toasted bread. Layer on lettuce leaves, 1.5 cups shredded/sliced chicken, 3 ham slices, and 4 bacon slices (arrange bacon evenly). Add tomato slices on top of the meats, then arrange avocado slices. Place 3 slices of Fontina cheese over the avocado (the warmth of the ingredients will help it soften). Spread the remaining honey Dijon on the top slice of bread and place it on the sandwich, spread-side-down.
Melt cheese (optional)
If you want the Fontina melted, return the assembled sandwich to the skillet, cover with a lid, and cook over low heat for 1–2 minutes until the cheese softens. Alternatively, place under a broiler for 30–60 seconds watching closely.
Finish and serve
Remove the sandwich from the heat. Let rest 30 seconds, then cut in half on the diagonal. Serve immediately with any extra honey Dijon on the side.
