Method
Cinnamon Simple Syrup
Make syrup
Combine sugar and water in a small saucepan over medium heat. Add 2 cinnamon sticks and optional whole cloves. Stir until sugar fully dissolves and mixture just reaches a gentle simmer (do not boil vigorously).
Reduce heat to low and simmer gently for 5 minutes to extract cinnamon flavor. Remove from heat and let steep for 15–20 minutes for stronger flavor.
Cocktail Assembly
Chill glass
If desired, chill a copper mule mug or highball glass in the freezer for 5–10 minutes before assembling.
Build the drink
Fill the chilled mug or glass with ice (about 1 cup). Pour in 2 oz cognac, 2 oz fresh apple juice, 0.5 oz fresh lime juice, and 0.5 oz cinnamon simple syrup. Add 2 dashes Angostura bitters if using.
Top and stir
Gently top with about 3 oz chilled ginger beer. Use a bar spoon to stir once or twice to incorporate — do not over-stir to retain carbonation.
Garnish and finish
Garnish with a thin apple slice slid onto the rim, a cinnamon stick placed in the drink for aroma, and an optional lime wheel. Serve immediately while ginger beer is fizzy.
