Method
Burger Patties
Form patties
Divide the ground AL Wagyu blend into two 8 oz portions. Gently form each portion into a patty about 3/4–1 inch thick, making a shallow indentation in the center with your thumb to help prevent doming while cooking. Do not overwork the meat.
Season
Just before cooking, season both sides of each patty evenly with kosher salt and freshly ground black pepper.
Cook
Heat a griddle or heavy skillet over medium-high heat and add neutral oil. When the oil is shimmering, place the patties on the hot surface. Cook for 3–4 minutes on the first side without moving, until a brown crust forms. Flip and cook another 2–3 minutes for medium-rare to medium (adjust time 3–5 minutes for desired doneness). During the last 1–2 minutes of cooking, place one slice of pepper jack cheese on each patty and cover the pan briefly to melt.

Wash and dry lettuce leaves, slice tomatoes into 1/4-inch rounds, and separate red onion into rings.
Assemble burger
Spread about 1 tablespoon of chipotle mayo on the bottom bun (if using). Place a lettuce leaf on the bottom bun, then one or two tomato slices and a couple of red onion rings. Place the hot cheeseburger patty on top. Spoon about 2–3 tablespoons of fresh guacamole over the cheese. Sprinkle 1/4–1/2 cup crispy tortilla strips over the guacamole for crunch. Top with the top bun and press gently to set.
Serve
Cut the burger in half if desired and serve immediately with fries, chips, or a side salad. Offer extra guacamole and tortilla strips on the side.
