Method
Buffalo Chicken Bites
Prepare the Chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces, about 1 inch each.
Set Up Breading Station
In one bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and onion powder. In a separate bowl, whisk together the eggs and milk.
Bread the Chicken
Dip each piece of chicken into the flour mixture, coating evenly, then into the egg mixture, and finally back into the flour mixture to create a thick breading.
Fry the Chicken
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the breaded chicken pieces in batches, making sure not to overcrowd the pot. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Coat with Buffalo Sauce
In a large bowl, toss the fried chicken bites with the buffalo hot sauce until evenly coated.
Blue Cheese Sauce
Combine Ingredients
In a mixing bowl, combine the crumbled blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and black pepper.
Mix Until Smooth
Using a whisk or fork, mix the ingredients until the sauce is smooth and creamy. Adjust seasoning with salt and pepper to taste.
Chill the Sauce
Refrigerate the blue cheese sauce for at least 30 minutes to allow the flavors to meld.
