Crust Preparation

Make the Dough

In a large mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Egg Yolks

Add the egg yolks and vanilla extract to the flour mixture. Mix until the dough comes together. Avoid overmixing.

Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Ricotta Filling

In a separate bowl, mix the ricotta cheese, granulated sugar, eggs, candied orange peel, lemon zest, ground cinnamon, and vanilla extract until smooth and well combined.

Assembling and Baking

Preheat Oven

Preheat your oven to 350°F (175°C).

Roll Out Crust

Remove the dough from the fridge and roll it out on a floured surface to fit a 9-inch pie dish. Place the dough into the dish and trim any excess.

Add Filling

Pour the ricotta filling into the crust, smoothing it out evenly.

Bake in the preheated oven for 45-50 minutes, or until the filling is set and the crust is golden.

Allow the pie to cool completely. Before serving, sprinkle with a mixture of powdered sugar and ground cinnamon.
