Dice and measure

Dice the yellow onion and red bell pepper into small, roughly 1/4-inch pieces. Chop the cooked bacon into bite-sized pieces if not pre-chopped. Measure out the cooked potatoes and shredded cheddar. Crack the eggs into a bowl and add the milk, salt and pepper; whisk until blended and slightly frothy.

Cook Vegetables & Potatoes

Heat a nonstick or cast-iron skillet over medium heat. Add the oil and 1/2 tablespoon butter. Once butter is melted and sizzling, add the diced onion and red pepper. Sauté for 3–4 minutes until softened and translucent.

Add the cooked potatoes to the skillet with the vegetables and press down so they make contact with the pan. Cook without moving for 2 minutes to get a little crust, then stir and cook an additional 1–2 minutes until heated through and lightly browned. Push the vegetable-potato mixture to one side of the skillet.

Cook Meats

Add the remaining 1/2 tablespoon butter to the empty side of the pan and let melt. Add the chopped bacon and diced ham to warm through for 1–2 minutes, stirring so they heat but do not over-brown. Mix the meats into the potato-vegetable mixture so everything is evenly distributed in the pan.

Make the Scrambler (Eggs)

Reduce heat to medium-low. Pour the whisked eggs evenly over the vegetable-meat-potato mixture in the skillet. Allow eggs to sit undisturbed for 15–20 seconds to begin setting, then gently stir and fold using a spatula, scraping the cooked edges into the center. Continue cooking, folding occasionally, until eggs are mostly set but still slightly glossy (about 1–2 minutes).

Sprinkle the shredded cheddar cheese evenly over the eggs and fold it in until melted and the eggs reach your desired doneness. Taste and adjust seasoning with additional salt and pepper if needed.

Optional Sausage Gravy & Toast

If using sausage gravy, warm 1/4 cup gravy in a small saucepan over low heat or microwave-safe container until hot (about 1–2 minutes). Keep warm until serving.

While eggs finish, toast your choice of bread (1 slice of toast, English muffin or biscuit) to desired darkness. Butter if desired.

Serve

Spoon the Scrambler onto a plate or serve directly from the skillet. Place the toast or bread on the side. If you ordered sausage gravy, drizzle the warmed sausage gravy over the scrambler or serve it on the side for dipping. Garnish with an extra sprinkle of cheddar if desired.
