Make simple syrup
Combine 0.5 cup granulated sugar and 0.5 cup water in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves. Remove from heat and let cool to room temperature. Store in a sealed container in the refrigerator for up to 2 weeks.
Build the Monster Mule (per serving)
Chill glass
If you like, chill a copper mule mug or highball glass in the freezer for 5–10 minutes or fill it with ice while you gather ingredients.
Measure spirits and modifiers
Pour 2 oz vodka into the glass, followed by 0.5 oz fresh lime juice and 0.5 oz green chartreuse or 0.5 oz melon liqueur (choose chartreuse for herbal complexity or melon liqueur for a sweeter, bright green 'monster' color). If you prefer a sweeter drink, add 0.25 oz simple syrup.
Top with ginger beer
Slowly pour 6 oz well-chilled ginger beer over the back of a spoon or down the side of the glass so the soda layers gently and retains effervescence. Leave a little room at the top to avoid overflow.
Bitters and stir
If using bitters, add 2 dashes Angostura or orange bitters on top. Gently stir once or twice with a bar spoon to combine without losing too much carbonation.
Garnish and serve
Garnish with a lime wedge or wheel on the rim, a piece of candied ginger skewered on a cocktail pick if desired, and a mint sprig for aroma. Serve immediately with a straw or stirrer.
