Method
Prepare Bacon-Wrapped Dogs
Preheat and prep
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on the sheet. This will allow bacon to crisp and drain. Pat bacon and hot dogs dry with paper towels.
Wrap franks with bacon
Take one hot dog and wrap two bacon slices around it in an overlapping spiral so the frank is fully covered. Secure the ends by tucking the bacon or using a toothpick if needed. Repeat for remaining hot dogs (you will use 2 bacon slices per hot dog).
Glaze
In a small bowl mix the brown sugar and black pepper. Lightly sprinkle and press the mixture onto the bacon-wrapped hot dogs so it sticks. Place the wrapped dogs on the wire rack.
Bake
Bake in preheated oven for 18–22 minutes, turning once halfway through, until bacon is browned and crisp but not burnt. If you want the bacon extra-crispy, broil 1–2 minutes at the end while watching closely.
Prepare Toppings & Buns
Prepare sauce
While dogs bake, combine barbecue sauce, yellow mustard, and mayonnaise in a small bowl. Stir until smooth. Taste and adjust: add a pinch more mustard for tang or more barbecue for sweetness.
Grate cheese
Grate the cheddar and have it ready to sprinkle. If you prefer melted cheese, you can place assembled dogs under the broiler for 30–60 seconds later.
Assemble & Serve
Assemble
Place one bacon-wrapped hot dog into each toasted bun. Spoon 1–2 tablespoons of the prepared barbecue-mustard mayonnaise sauce over each dog. Sprinkle grated cheddar cheese on top, then add sliced pickles and pickled jalapeños as desired. Finish with a scatter of sliced green onions and a grind of black pepper.
Optional melt
If you want melted cheese, place the assembled dogs on the baking sheet and broil 30–60 seconds until cheese is bubbling—watch carefully to avoid burning.
Serve
Serve immediately while hot and crispy. Provide extra barbecue sauce and pickles on the side for guests.
