Build and chill

Place a mixing glass or small pint glass on a bar towel. Add the Irish whiskey, aged rum, and Averna amaro to the mixing glass.

Add the simple syrup, 2 dashes Angostura bitters and 1 dash orange bitters to the spirit blend.

Fill the mixing glass with plenty of ice (enough to chill and dilute) and stir gently but thoroughly for 30–45 seconds until the mixture is well chilled and slightly diluted (roughly 20–25% chill dilution depending on temperature).

Strain the cocktail into an Old Fashioned (rocks) glass over a single large ice cube (or 3–4 fresh small cubes).

Express the oils from the orange peel over the surface of the drink by holding the peel with the outside facing down and giving it a firm squeeze so the oils spray onto the cocktail.

Rub the peel around the rim of the glass for aroma, then drop the peel into the drink or discard according to preference.

Skewer the Luxardo cherry (optional) and place it into the glass alongside the orange peel.

Serve

Serve immediately. Sip slowly — the Duck Hunter is spirit-forward but softened by amaro and a touch of rum, with aromatic citrus and bitters balancing the finish.
