Cook the Rice

In a medium saucepan, bring the vegetable broth to a boil. Add the carnoli rice, reduce heat to low, and cover. Cook for about 18-20 minutes, or until the rice is tender and has absorbed the broth. Remove from heat and let cool.

Prepare the Mixture

In a large mixing bowl, combine the cooked rice, grated Parmesan cheese, chopped basil, and beaten eggs. Season with salt and black pepper. Mix well until all ingredients are thoroughly combined.

Form the Balls

Take a small amount of the rice mixture and flatten it in your palm. Place a cube of mozzarella cheese in the center and mold the rice around it to form a tight ball. Repeat until all the mixture is used.

Coat the Arancini

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each rice ball in flour, dip it into the beaten eggs, and then coat it with breadcrumbs until well covered.

Fry the Arancini

In a deep frying pan, heat the olive oil over medium-high heat. Once hot, carefully add the arancini balls in batches, making sure not to overcrowd the pan. Fry until golden brown, about 4-5 minutes, turning as needed. Remove and drain on paper towels.

Serve the arancini warm with your favorite marinara sauce or pesto for dipping.
