Coffee & Cocoa Rub Preparation

Mix the Rub

In a small bowl, combine the ground coffee, unsweetened cocoa powder, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly combined.

Prepare the Steak

Take the USDA Prime filet mignon out of the refrigerator and let it rest at room temperature for about 30 minutes before cooking.

Apply the Rub

Drizzle olive oil over both sides of the filet mignon pieces. Generously apply the coffee and cocoa rub mixture to all sides of the steak, pressing it into the meat to ensure it adheres well.

Cook the Steak

Preheat a grill or skillet to medium-high heat. Once hot, place the rubbed filets on the grill or skillet. Cook for about 4-5 minutes per side for medium-rare, or until the desired doneness is reached.

Rest the Steak

Remove the steaks from the heat and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute for a more flavorful steak.
