Prepare the Steaks

Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

Season the Steaks

Generously season both sides of the filet mignon with kosher salt and black pepper. Make sure to rub the seasoning into the meat for better flavor.

Preheat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers. Ensure the pan is hot before adding the steaks.

Sear the Steaks

Once the oil is hot, carefully place the filet mignon steaks in the pan. Sear for about 4-5 minutes on one side without moving them, until a nice brown crust forms.

Flip the Steaks

Flip the steaks and add the butter, garlic cloves, rosemary, and thyme to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the steaks with the melted butter and herbs.
