Method
Preparing the Salmon
Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.
Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot but not smoking.
Sear the Salmon
Place the salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes until the skin is crispy and golden brown.
Cooking the Vegetables
Prepare the Vegetables
While the salmon is cooking, trim the ends of the asparagus. Halve the cherry tomatoes and chop the red bell pepper into bite-sized pieces. Mince the garlic.
Sauté the Vegetables
In the same skillet used for the salmon, add the asparagus, red bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables are tender-crisp.
Add Cherry Tomatoes
Add the halved cherry tomatoes to the skillet and cook for another 2 minutes until they are slightly softened.
Serving
Plate the Dish
Serve the salmon fillets on a plate alongside the sautéed vegetables.
Garnish
Garnish with lemon wedges and sprinkle with fresh parsley if desired.
