Brown the sausage
Heat a large skillet over medium-high heat. Add the sausage (removed from casings) and cook, breaking into bite-sized crumbles with a spatula, until browned and no pink remains, about 6–8 minutes. Use a slotted spoon to transfer cooked sausage to a bowl, leaving rendered fat in the pan.
Sauté vegetables
Reduce heat to medium and add 1 tablespoon olive oil to the same skillet if needed. Add diced onion and red bell pepper; sauté until softened, 4–5 minutes. Add diced zucchini and continue to cook 3–4 minutes until just tender. Stir in minced garlic and cook 30–60 seconds until fragrant.
Season vegetables and combine
Return the browned sausage to the skillet with the vegetables. Add salt, black pepper and red pepper flakes; stir to combine and cook 1–2 minutes to meld flavors.

Cook the rice (if not using pre-cooked)
If you are starting with uncooked rice, rinse 1 cup long-grain white rice under cold water. In a small saucepan bring 2 cups chicken broth (or water) to a boil, add rice, reduce heat to low, cover and simmer 15 minutes (or 40 minutes for brown rice) until liquid is absorbed. Remove from heat and let rest covered 5 minutes, then fluff with a fork. (If using leftover or store-bought cooked rice, heat it briefly before assembling.)

Make the quick sauce
Push the sausage-vegetable-bean mixture slightly to one side of the pan. Add the tomato paste and Worcestershire sauce to the cleared space, let the tomato paste cook 30–60 seconds to deepen flavor, then stir everything together. Add dried oregano and lemon juice and stir to coat. If the mixture seems dry, add up to 2 tablespoons water or reserved chicken broth to loosen.
Combine with rice and finish
Spoon the cooked rice into the skillet (or place rice in serving bowls and top with sausage mixture). Stir to combine so rice is evenly coated and warmed. Sprinkle grated Parmesan cheese and chopped parsley over the top and gently toss or stir to distribute. Taste and adjust seasoning with additional salt, pepper or lemon juice as needed.
